These breakfast cookies have been my go-to during college! They are so simple to make and create an easy grab and go option for busy mornings. Follow this simple recipe and you’ll have a delicious treat for breakfast or a snack!

What you’ll need:

3 ripe bananas

1 ½ cups uncooked old-fashioned oats

1/3 cups powdered peanut butter

¼ tsp slat

1/3 cups mini chocolate chips

Baking sheet

Mixing bowl

Fork or masher

Start by preheating your oven to 350 degrees (F)

Next peel and mash your bananas in the mixing bowl until there are no large chunks

Stir in your oats, peanut butter powder and salt until combined

Mix in your chocolate chips

Scoop the dough into balls about the size of a tablespoon and place them on a greased baking sheet. About 16 balls. (They will not spread, so they can be placed closer than a regular cookie)

Bake for 20 minutes at 350 degrees.

Enjoy!

This is such a great recipe to have on hand and is perfect for when your bananas are getting really ripe! They’re a crowd pleaser and are so easy to whip up. I love being able to eat them on the go or throwing a few in my backpack for an afternoon snack. As someone who has a sweet tooth, I feel good about eating these knowing they are protein packed.
